Sheet Pan Dinner

I LOVE simple meals, that is no surprise, but especially ones that don't require a lot of dishes to clean.

This is hardly a recipe but it frequents my kitchen so much that I have to share it here.

Sheet Pan Dinner

I usually follow the simple formula of Veg + Protein + Grain or Green + Sauce.  

1) Roast vegetables and protein on a baking sheet at 400 degrees for 20-40 minutes

2) Serve over grain or greens with sauce

 

Here are a few options I love but feel free to mix it up! 

Broccolini + Cubed Tofu + Rice + Soy Sauce/ Sriracha/ Sesame Oil

Cauliflower + Chickpeas + Kale + Avocado Garlic Aioli

Butternut Squash + Cubed Tofu + Quinoa + Chipotle Veganaise

Brussel Sprouts + Black Beans + Barley + Whole Grain Mustard/ Olive Oil/ Apple Cider Vinegar
