Peanut Butter Oatmeal Banana Bread

I started making this recipe in my early vegan days. It is such a good 'sweet treat' breakfast option! You can use vegan chocolate chips (I like the Enjoy Life! brand) or not! I used classic chocolate chips this time and it was fantastic!

This recipe is also gluten-free if that's your jam! (Just be sure the oats are certified gluten-free!)

Peanut Butter Oatmeal Banana Bread
Ingredients
  • 2 1/2 cups rolled oats
  • 2 bananas, mashed
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup regular or vegan chocolate chips
Instructions
1) Oil loaf pan and preheat oven to 350 degrees2) Pulse oats in a blender to a fine crumb3) Add all remaining ingredients, except for the chocolate chips, to the blender and mix. (This is where a Vitamix comes in handy)4) Fold in chocolate chips5) Pour batter into loaf pan6) Garnish with additional chocolate chips7) Bake for 25-35 minutes until a toothpick comes out clean
