Ultimate Veggie Sandwich
I don't know about you, but a deli sandwich isn't complete without SPROUTS! I love the texture and flavor they provide! Not to mention all the vitamin and minerals they provide (!!!) They are little powerhouses of health!
I've been growing my own sprouts lately and it is surprisingly easy!
I have been using these sprout seeds you can buy from Amazon. They are super cheap and 4 oz will last you a long time. You scoop 1.5 tablespoons of seeds into a large mason jar with water. I have probably 30 of these that I use for dry storage (nuts, oats, raisins, seeds, flour, etc) and water glasses.
Then I use this lid for the growing process. All of the instructions are on the back of the lid packaging: After 8-10 hours of soaking the seeds, you drain and rinse the seeds and store the jar at an angle in a bowl so that further liquid can drain out. Then you simply rinse and drain the seeds twice a day, storing at an angle in a bowl.
In 3-4 days you will have your own sprouts!
I have been loving them in this loaded veggie sandwich with tempeh and tons of veggies, providing lots of fiber to help you feel full, on homemade bread!
- 2 slices bread
- 1/2 block tempeh
- 4-6 slices cucumber
- 2-4 slices tomato
- 1/2 avocado
- dollop roasted garlic hummus
- handful spinach
- handful sprouts
- 1 tablespoon avocado oil
This sandwich lends itself to lots of variations!
Try with some optional toppings:
spreads- whole grain mustard, olive tapenade, or chipotle veganaise
pickled onions, banana peppers, jalapenos, radish slices, roasted red bell peppers
