One Pan Mexican Quinoa

This is a Pinterest find that has turned into a once-a-week meal in our home. We have been making it for the last 3 years... at least. Never underestimate the power of a one-pan dish. I will cook anything if it guarantees only one pan to clean!! :)

With so many attempts at this recipe, you would think I would get creative with this recipe to make it my own. But I usually never stray from the original... it is that good.

One Pan Mexican Quinoa
  • 1 can Black Beans
  • 1 can Corn
  • 1 can Fire Roasted Tomatoes
  • 1 cup Veggie Broth
  • 1 cup Uncooked Tricolor Quinoa
  • 2 Garlic Cloves, minced
  • 1 Jalapeno, Seeds and Flesh Removed, Diced
  • 1 tablespoon Chili Powder
  • 1 tablespoon Cumin
  • 1 tablespoon Olive Oil
  • Juice of One Lime
  • Salt
  • Pepper
  • (optional topping) Cilantro
  • (optional topping) Avocado
1) Heat the olive oil in a large skillet over medium heat. Add garlic and jalapeno. Stir until fragrant.2) Add tomatoes, uncooked quinoa, beans, corn, vegetable broth, and seasonings. Bring to a boil and reduce to a simmer. Simmer for 20 minutes.3) Top with avocado, lime juice and cilantro. Enjoy!
